Cabernet Merlot

In 1998 a range of grape varietals were planted totalling 18 hectares (45 acres) including Shiraz, Cabernet Sauvignon, Merlot, Chardonnay, Semillon, Sauvignon Blanc and Viognier.

Since 2003, small parcels of fruit have been hand selected to produce the staple of Hillbillé wines - the Estate and Reserve range.

TASTING NOTE​

​

Evokes thoughts of mulberries, cassis, violets and sage, all layered onto a well structured palate. Fine grained tannins and hints of high toned French oak.
