Merlot

In 1998 a range of grape varietals were planted totalling 18 hectares (45 acres) including Shiraz, Cabernet Sauvignon, Merlot, Chardonnay, Semillon, Sauvignon Blanc and Viognier.

Since 2003, small parcels of fruit have been hand selected to produce the staple of Hillbillé wines - the Estate and Reserve range.

TASTING NOTE​

​

Greets with perfumes of freshly sliced satsuma plum, violets and small red berries, dissolving to reveal succulent minerals, spice and dark fleshy fruits.
