In 1998 a range of grape varietals were planted totalling 18 hectares (45 acres) including Shiraz, Cabernet Sauvignon, Merlot, Chardonnay, Semillon, Sauvignon Blanc and Viognier.

Since 2003, small parcels of fruit have been hand selected to produce the staple of Hillbillé wines - the Estate and Reserve range.

TASTING NOTE

Rich plum jam and glazed cherry nose, hints of nutmeg and orange rind. Intense red fruit palate with savoury, earthy tones. Subtle citrus blossom finish and minerality.
